I’m wondering if I need to spend every sweet I can before the event ends, or if I can save the little I’ll probably have left to put towards other things next year.

Sweets are not saved at the end of the event, so having some left won't help you next year.

Okay. I was just thinking it might carry over like the Shaymin shiny chance.

Edit: Oh, or maybe they’d get converted into something else, like the points from the fair turning into festival points. Just an idea. It would be really cool if they got turned into festival points, actually.
