Yeah, I know the whole 'Pokemon stop appearing after a certain while' has been fixed and resolved, but I also don't know if it's ALWAYS been a feature as I normally don't participate in it.

I can sometimes score as high as the mid 90s to even 101 points, but almost all the eggs don't have uncovered details. Is that true? How high or average does my score have to be to see everything about an egg?

What you see, is decided randomly. The scores decide the possible Bugs that will hatch from the Egg and their rating [you're more likely to get an Egg that is "Supertalented" if you have a higher score].
However, the score does not decide how many of those ratings are revealed. That's all RNG.
