how do we hatch specific mons in this game?

There’s no way to know specific without daycare, but you can go to auction house or trade with others for specific Pokémon that you want!
With Premium there’s a way to see (or without premium) if you wait long enough and nobody takes an egg from the lab, you can see what the Pokémon is. Event distributions will always tell you what you get in them, etc.
