So the wiki said I have to battle the ultrabeast and defeat it to receive an egg but just how strong are the ultrabeasts? I plan on using my saddle but I don't want to go in unprepared.

Icon is from the official manga. As you can probably tell, I love the weedle line.

I cant say for sure, but I've fought a number of boss battles and haven't lost a single one yet.
Generally speaking, I just make sure I send an level 100+ pokemon and keep type matchups in mind. Ideally send a dual-type that can resist both of the other mons types.
