Why is it that some items go incredibly fast in a small amount of time. They go way beyond the capability of being able to finish before time runs out. And 30 seconds is not a lot of time. And add a laggy computer/laggy wifi into the equation. How is it expected from people to catch items & Pokemon with speeds that go beyond human comprehension .

Some pokémon/items require timing. It doesn't make them impossible, it just requires a strategy.

Is there a reason why when I go to the beach the numbers pass twice as fast and when I catch it and click continue it says "it escaped..." over and over again?

The energy displayed and the energy you actually have got mismatched, which means you didn't have enough energy to fish, even though the code thought you did.
