Does anyone have any idea how many interactions it normally takes for Kyurem to appear? And if I continue to interact with pokemon (since I tend to rapid click) after it shows up will it disappear?

It's random.

If I continue to interact with pokemon after it shows up will it disappear?
No. It will show a dialogue for a while, after you decide to pick the egg up then your interactions will be resumed. Don't forget to leave an empty space in your party when interacting.

Kyurem appears randomly, so there's no number that can be linked to its appearance.
It'll stay in the User Bar until you claim it, though, so you won't need to worry about the Kyurem disappearing ;)
If you don't have a spot in your Party, you'll get a warning and be asked to make a spot before claiming the egg. You won't lose the egg, if you accidentally try to claim it with a filled party.
